Nacho Mac and Cheese
3 c uncooked gemelli or spiral pasta
1 lb ground beef
¼ c butter, cubed
¼ c flour
1 envelope taco seasoning
¼ tsp pepper
2 ¼ c milk
2 c (8 oz) shredded cheddar cheese
1 c frozen corn, thawed
1 c crushed tortilla chips
Cook gemelli according to package directions. Meanwhile, in a Dutch oven, cook beef and red peppers over medium heat until meat is no longer pink; drain.
Stir in the butter, flour, taco seasoning and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 min. or until thickened. Remove from heat. Stir in cheese and corn until cheese is melted. Drain gemelli; add to beef mixture and stir to coat. Sprinkle with tortilla chips.
